Caringbah Hotel Bistro has recently been renovated and rebranded as Graziers Grill House. We have the same staff working here but with a new menu and concept. Our guests range from tradies, families, seniors and young adults. During the transition we got to work closely with Glenn Flood. Glenn is an amazing chef and has worked internationally with some of the greats as well as being involved with the production of MasterChef. We also had a work placement student called Adam at this time who also got to learn from Glenn.

Why do you host students?

I believe knowledge should be shared as often as possible. Hosting students gives my team a chance to teach and pass on their skills and information learnt. It helps us in refining our training skills as chefs and allows students to work out if a career in this industry is really for them.

Have you ever employed a work placement student?

Yes, I have. A girl called Letitia came to our venue for her year 11 placement and I then hired her to work casually while she finished high school. After that I hired her full time as an apprentice chef and she continued to work with me for several years after that.

What are the benefits to your business in participating in the program?

The obvious benefits are an extra pair of hands to help out, but it benefits us far more than that. We get to speak to the students about their hospitality course and how they are going with it. We answer any questions they have about the industry and being a chef. We also provide a real time trial of what a busy kitchen and working as a chef is like.
